New food-tech startup Pataka was founded by Arjun Baljee, whose family runs numerous restaurants in India, all of which hold prestigious recognition and awards from the likes of Conde Nast Traveller and TripAdvisor. Now, Pataka is cooking up an authentically updated Indian experience for Londoners, whilst using a very interesting and unique business model. 

Meaning ‘firework’ in Hindi, Pataka brings an explosion of flavour, the magic of India’s varied cuisines in a smart, modern manner. Using timeless methods, updated ingredients and mindful packaging, Pataka is upgrading the ordinary. Call it Indian 2.0.

Due to the COVID-19 pandemic, the restaurant industry is on its knees, and the Pataka business model seeks to help those owners. With the infrastructure already in place, Pataka will use closed restaurant spaces to create their dishes. With no storefront, Pataka is run from what Arjun calls “bright kitchens”. Pataka seeks to reimagine food delivery, bringing innovative Indian food cooked right and delivered as though it’s just come off the stove: fresh, seasonal, flavourful and maintaining its texture. 

The first site opened on Thursday 4th February 2021 at London Victoria’s iconic Adrian’s Restaurant, and the plan is to expand to 5+ more sites across London in the next 3 months. 

While the old familiar dishes can be found on the menu, there are some interesting seasonal flavours like Wild Mushroom Rice with morels, Tandoor Spiced Baby Chicken with Pataka’s authentic tandoori masala, a Chili Chutney found nowhere else and Truffle Pecorino Kulcha with black truffle oil, shitake, pecorino and cheddar.
